Stuffed Juju Shells

The Juju Woman hit a home run with these. I just stood back and watched.

Filling: Ricotta Cheese, sautéed onion, garlic, poblano pepper, spinach, parmesan cheese, and an egg.

Sauce: Ground Beef, onion, pepper, tomato sauce, whole tomatoes, yellow squash, garlic, basil, oregano, fresh black pepper and olive oil.

    Mm-hmm. Probably need to make some of these this weekend. Haven’t made stuffed shells in a long time. I like to stuff mine sometimes with Tex-Mex seasoned ground beef, Mexi-corn, peppers, etc. and cover with a cheesy tomato based sauce.
